Spending too much time in the kitchen can be stressful. Lately, I have been trying to prep food for the coming week so that I don’t have to spend so much time cooking. Usually, I’ll make a veggie dish, a grain or bean dish, and a meat dish. The trick to not getting bored of eating the same thing everyday is to add variety. A couple weeks ago, I made delicious Quinoa Hummus Bowl with Sauteed Kale. The quinoa and veggies were all part of my meal prep from the previous weekend. I had some hummus in the fridge already but greek yogurt or a cilantro avocado dressing would work just as great. Here is what I used:
1/2 cup of quinoa, cooked
2 tbsp of hummus
2 cups of sautéed kale, shredded
1/2 red sautéed onion, minced
Layer the ingredients in a bowl or mix together & enjoy!
